What comes next: week 4

During the first three weeks of this course we have discussed different aspects of superfoods.

For instance, we have described their nutritional properties, their effect on the brain and cognitive health, the role of gluten-free diets and alternative grains, and we have discussed how we can substitute superfoods with other similar foods.

In the next week we will try to understand whether superfoods have also a “dark” side to them: can we eat too much of a vitamin, or of some other micronutrient? What are antinutrients? Are they a health risk and can they found in superfoods?
