In order to solve eating disorders, various countries have established dietary texture classifications to help elderly people find suitable foods.

Common eating difficulties among the elderly include difficulty chewing, swallowing, and taste disorders. The above three oral function problems may cause malnutrition in the elderly due to eating difficulties, which may lead to other physiological dysfunctions. This article also introduces the common food texture grading in various countries. According to different national standards, they are Japan’s UDF, Midea NDD, the internationally unified standard IDDSI and Taiwan’s food texture grading.
