The United States and Japan have different food texture grading standards. The international organization IDDSI takes the best of both worlds.

In the United States, dietary texture grading standards are determined by professional medical institutions based on scientific practical experience, while in Japan, the standards are based on the actual conditions encountered by the elderly. This week’s course introduces in detail the food texture classification standards (IDDSI) developed by the International Dysphagia Diet Standardization Association.
