Hello everyone. I’m Yue-Hwa Chen, a professor from school of nutrition and health sciences, College of nutrition Taipei Medical University. The topic I’m going to share with you today is diet and cancer. I’m going to divide my talk into different categories. First, I’m going to talk about the cancer statistics. And then I’m going to share with you ways of diet affecting cancers from five different aspects. And finally I’m going to talk about goals and the recommendations for cancer prevention. This is the 10 leading causes of death in the United States 2015.

And we can observe here malignant cancer malignant tumor that is cancer we usually call it cancer is the number two cause of death and actually, lots of countries the top one leading cause of death is cancer. and this is the race of new cancer cases and the rates of cancer deaths and we can see here that there are different sides of cancer may occur and a lot of them. Among maybe more than five or six of them are diet associated so that means diet is very important in cancer incident or in cancer prevention. This is the progression of cells from normal cells to cancer cell.

In the center we can see the progression of cancer, and in the left we can observe that there are different kind of diet components may enhance the cancer risks. And they are also components in our diet to decrease the cancer risk, so actually there are two types of effects from our diet, from the left pro-cancer effects and the from right anti-cancer effects. You may wonder how diet affects the cancer risks. There are five different ways of diet affecting the cancer incident.

First of all, we may ingest powerful carcinogens from our diet directly And secondly, there are substances in our diet may affect carcinogens formation in our body And the third, there are substances in our diet may affectcarcinogen of metabolism in our body and then there also substances may affect cancer cell metabolism and finally the energy intake may also affect the cancer incidence. so I’m going to talk in more detail in the following slides.

The origins of cancer may vary. However, in recent researches, there are many evidenced showing that carcinogens may be one of the most important causes. One of the most common ways that carcinogens could enter human body is through foods.
