Waste water and solid waste are the main winery waste (marc, is grape skins and seeds). These wastes are full of nutrients. The biggest issue for wineries is containing these nutrients so that they do not pollute the environment. This means stopping the nutrients from entering waterways or groundwater. Wineries also need to prevent odours and greenhouse gases from entering the atmosphere.

The SWNZ ( Sustainable winegrowing New Zealand) mantra is: Reduce, Reuse, Recycle
