When developing your prototype may need the expertise of someone who is a specialist in food technology. For example, if you have identified a salad dressing product, you will need to ensure that it doesn’t separate or deteriorate, and you need to ensure the shelf life of the product. You also need to consider aspects such as nutritional values, requirements for labelling and allergens.

At this stage you will also develop standardised recipes and design packaging for your product. During this process of development, you need to have a system to note and record accurate details of the entire process. This allows you to chart each attempt, so that comparisons can be made.

You need to record details of:

  • Ingredients and recipe.
  • Cost of ingredients.
  • Quality of ingredients.
  • Different makes/brands of the same ingredient used.
  • Any adjustments.
  • Time needed to produce.
  • Yields.

Activity

Develop your prototype, for this activity we wouldn’t suggest that you hire specialist skills unless you are very keen to launch your product, this activity is more for course practice of the process.
