One of the questions I often get asked is how do you decide on what to plate up?

This is all in the planning stage. Make sure that your menu flows and that you do not repeat any of the ingredients or styles of cooking on the courses you are going to serve. So do not serve a soufflé as a starter and then again as a dessert for example.
