Steps to start plating

Chef Andy explains the steps involved in Plating.

Once I have my design, I start plating according to the following steps.

I first place ingredients, such as mashed potatoes or purees, on the dish before the main “hero” element, add your main hero item such as meat, poultry or fish.

You can then place the rest of your ingredients on top to keep them from shifting and ruining your perfect plate.

Lastly, the sauce and suitable complimentary garnishes.
