These have ranged from near-infrared spectroscopy, already widely used in the food sector for routine measurements, through to cutting-edge instruments for carrying out high-resolution NMR spectroscopy and stable isotope analysis. The diversity of food labelling information means that no single technique is able to verify all claims at once. We’ve seen that there is often a trade off between the detail and depth of chemical information obtained and the cost and complexity of the technology. The role of the analyst is to make the right choice of tool for the task at hand.
