Skip to 0 minutes and 7 secondsHello everybody! Today I decided to prepare you another typical recipe from Italy. It's getting quite cold outside so I decided to prepare soup, which is a soup with cereals and legumes. There is a mixture of beans, barleys, peas. So, the ingredients are 500 grams of a mixture of legumes and cereals, 1 leek, a couple celery stalks, 1 clove of garlic. I would say about six leaves of cabbage, a couple of potatoes, 1 onion, 1 tomato and 2 carrots. Then to give a better flavor to the soup we can add at the end some thyme, some rosemary and some bay leaves.
Skip to 1 minute and 16 secondsIt's a very healthy and easy to prepare recipe with a lot of proteins from the legumes and, of course, all the vegetables. So, the first thing to do is to chop the onion, the carrots and the celery stalks, and fry them slowly inside of a pan.
Skip to 2 minutes and 3 secondsOnce we chop the vegetables, we add some extra virgin olive oil, just an amount to slightly fry these vegetables and, as soon as it's heated, we put inside the vegetables. As you see, I just chopped them quite roughly, they don't need to be very small. Once the leek cut we can add it to the other ingredients
Skip to 2 minutes and 41 secondsand we also had about three bay leaves.
Skip to 2 minutes and 51 secondsWhen the vegetables are fried it's time to add cereals and legumes.

Skip to 3 minutes and 28 secondswe add some salt
Skip to 3 minutes and 34 secondsand we cover. After about 40 minutes that you've been boiling the soup, you just get some cabbage leaves. For this quantity we would recommend about 7/8 leaves and you just cut them in slices.
