Consumer engagement with food has been steadily growing with healthy, sustainable, and ethical food arguably increasing in demand. Recent advancements allow for individual responses to foods and diets to become increasingly understood, aligned for personalised nutrition. Personalised nutrition looks at the complex interaction between nutrients and genes to create tailored dietary recommendations. As a result, this can optimise the health of the individual and work on a larger scale to prevent and manage society-wide chronic diseases. Technology and digitalization across the food chain also offers consumers more opportunities to find, research, and share their opinions and preferences on foods; creates trust and transparency in our food system; and allows consumers to make informed decisions.
